Rich, chocolatey and infused with bold coffee flavour, these chocolate buns with coffee ganache are an indulgent dessert that’s perfect for entertaining or weekend baking. Topped with lightly spiced whipped cream and a silky coffee ganache, every bite strikes the perfect balance of deep cocoa, aromatic coffee and warming spices. Chocolate buns with coffee ganache
Ingredients
- For the chocolate buns
- 1 cup flour
- 1 cup brown sugar
- 1 tbsp baking powder
- 1⁄2 tsp cinnamon
- Pinch nutmeg
- 1⁄2 cup cocoa
- 1⁄2 cup warm black coffee
- 1⁄2 cup oil
- 200 g dark chocolate, melted
- 5 eggs, separated
- For the sweet cream
- 1 cup cream
- 1 tbsp honey
- 1⁄4 tsp ground cloves
- 1⁄4 tsp ground nutmeg
- 1⁄4 tsp ground cardamom
- For the coffee ganache
- 250 g dark chocolate, finely chopped
- 1/2 cup cream
- Pinch salt
- 2 tbsp instant coffee
Instructions
For the chocolate buns
PREHEAT the oven to 180°C. Grease 10 round 8cm moulds and set aside.
MIX all the dry ingredients together.
WHISK coffee, oil, melted chocolate and egg yolks until smooth. Pour into the dry ingredients and mix until combined.
WHIP egg whites to soft-peak stage and fold them into the chocolate.
DIVIDE the mixture between prepared moulds and bake for 30 minutes.
For the sweet cream
WHIP the cream until fluffy, then gently fold in the honey and spices.
For the coffee ganache
PLACE the chocolate in a bowl.
HEAT the cream, salt and coffee until tiny bubbles appear around the edge; pour over the chocolate and allow it to sit for 1 minute. Mix until smooth.
SERVE chocolate buns with a dollop sweet cream and ganache.
