• Frosted vanilla cupcakes

    • 180g (1½ cups) cake flour
    • 150g (¾ cup) sugar
    • 10ml (2 tsp) baking powder
    • 2,5ml (½ tsp) salt
    • 125ml (½ cup) milk
    • 125ml (½ cup) oil
    • 2 large eggs
    • 5ml (1 tsp) vanilla extract
    • ICING
    • 130g (1 cup) icing sugar
    • 30ml (2 tbsp) water
    • 1 vanilla pod



    Preheat the oven to 180ºC.


    Sift the flour, sugar, baking powder and salt into a mixing bowl. Add the remaining ingredients and beat well until smooth and creamy.


    Line the openings of 2 x 6-hole muffin tins with cupcake papers and pour batter into each cup up to ¾ full. Bake for 12 – 15 minutes, remove from the oven and leave to cool.


    To make the icing, whisk the sugar and water until thick and syrupy, adding more water if necessary. Split the vanilla pod lengthways and scrape the tiny black seeds into the icing mixture. Mix well.


    Drizzle the icing over the cooled cupcakes and serve.
