A quick and easy starter for your next dinner party. These goat’s cheese and asparagus puff pastry tarts will ensure your guests line up for seconds and leave your party with a warm heart and a full stomach.
Goat’s cheese and asparagus puff pastry tarts
- 1 x 500g roll puff pastry
- 1 large egg, beaten
- 1 log goat’s cheese, sliced into rounds
- 200g asparagus, blanched
- 2 spring onions, thinly sliced
- rocket microgreens, to serve
- fresh basil, to serve
- grated Parmesan, to serve
- sea salt and freshly ground black
- pepper, to taste
- olive or avocado oil, to serve
Preheat the oven to 180°C.
Roll the pastry out on a floured work surface and cut into 4 squares. Place the squares on lined baking trays and score the edges of the pastry with a sharp knife to create a border. Prick the inside of the square with a fork.
Brush the pastry with beaten egg and bake in the preheated oven until puffed and golden, about 10 – 12 minutes. Remove from the oven and set aside.
Place slices of goat’s cheese on the pastry squares, followed by asparagus, spring onions, rocket microgreens, basil and Parmesan. 5 Season well and drizzle with olive or avocado oil just before serving.
