    Grapefruit, strawberry and mint granita

    Serves: Makes 500ml
    Cooking Time: 15 mins + freezing


    • 250g fresh strawberries, stalks removed and halved
    • 250ml (1 cup) grapefruit lemonade
    • 30ml (2 tbsp) fresh mint



    Place the strawberries, grapefruit lemonade and mint into a blender and blitz until smooth.


    Strain the mixture and pour into an ice-cream container. Freeze the mixture. During the freezing process, use a fork to break down the ice crystals to form a granita. Repeat this process twice while freezing.


    Adult spike: Add a dash of sake to the mixture before freezing.
