Green peppers with bocconcini wrapped in crispy prosciutto
- 8 thin slices of toasted baguette
- 8 large green chillies, sliced open and seeded
- 8 bocconcini, sliced
- 8 slices prosciutto
- baby greens, to serve
Preheat the grill.
Place the toast on serving dishes.
Hold open the chillies and stuff with the bocconcini. Wrap the prosciutto around the chillies and place on a baking tray.
Grill until the prosciutto is crispy and the bocconcini is just starting to melt, about 3 minutes.
Serve with the greens.
