TO DRINK: The flavourful and spicy Migliarina Shiraz 2007, with aromas of cassis, cherries and nutmeg.
Lamb kofta croquettes
- 500g lamb mince
- 500ml (2 cups) saffron rice, cooked
- 200g fresh mint, chopped
- 1 garlic clove, finely chopped
- 15ml (1 tbsp) ground cumin
- 15ml (1 tbsp) fresh coriander, chopped
- 30ml (2 tbsp) barbeque spice
- 1 onion, chopped
- oil, for deep-frying
Mix together all the ingredients to combine well and roll into small balls.
Deep-fry in batches and serve.
