Mixed berry, vanilla and lemon sorbet recipe

A refreshing sorbet to cool you down on long summer days. Mixed berry, vanilla and lemon sorbet is the perfect combination of sweet and tangy.

Mixed berry, vanilla and lemon sorbet

Serves: Makes 750ml
Cooking Time: 30 mins + extra for freezing

Ingredients

  • 250g sugar
  • 500ml (2 cups) water
  • 30ml (2 tbsp) lemon juice
  • 250ml (1 cup) raspberries
  • 250ml (1 cup) blackberries
  • 250ml (1 cup) blueberries
  • 125ml (½ cup) strawberries
  • 5ml (1 tsp) vanilla seeds
  • zest of ½ lemon

Instructions

Heat the sugar and water until the sugar has dissolved. Remove from the heat, add the lemon juice and leave to cool completely.

Mix in the rest of the ingredients and purée with a hand blender. Try to leave a few whole berries in the mixture.

Place the mixture in an ice cream machine and churn according to the manufacturer’s instructions.

Alternatively, place it in the freezer and whisk it with a fork every 2 hours to ensure a smooth texture.

Freeze the sorbet overnight and serve as is or scooped into sugar cones.
