Mojito and coconut sorbet

Serves: 4 – 6
Cooking Time: 20 mins + freezing time


  • 220g brown sugar + extra, to serve
  • 500ml (2 cups) water
  • 2 stalks fresh mint, finely chopped
  • 100ml rum
  • juice and zest of 2 limes
  • 1 x 410ml tin coconut milk
  • 2 free-range egg whites
