Pea, spinach and ham soup

Serves: 4
Cooking Time: 15 mins

Ingredients

  • 15ml (1 tbsp) olive oil
  • 1 brown onion, chopped
  • 1 garlic clove, crushed
  • 1L (4 cups) chicken stock
  • 480g (4 cups) frozen peas
  • 100g baby spinach leaves
  • 200g leg ham, torn
  • sour cream, to serve

Instructions

Heat the oil in a saucepan over high heat.

Add the onion and garlic and cook for 3 – 4 minutes. Add the chicken stock and bring to the boil. Add the peas, spinach and ham and blend with a hand-held blender until smooth.

Top with sour cream to serve.
