The perfect tomato jam really lives up to its name. This fuss-free condiment is easy to make and a delicious accompaniment to almost any dish!
The perfect tomato jam
- 1,2kg mixed medium tomatoes
- 900g white sugar
- 10ml (2 tsp) lemon juice
- 2cm fresh ginger, sliced
- a pinch of salt
- 5ml (1 tsp) butter
Bring a large pot of water to a boil. Cut a cross at the base of each tomato and blanch in the boiling water for 1 minute. Refresh in ice water and remove the skins.
Place the tomatoes in a 5L ice-cream container and add the sugar, lemon juice, ginger, salt and butter. Stir lightly until the sugar is wet and place in the microwave on 100% power for 35 minutes. Stir every 10 minutes.
Bottle the warm jam in sterilised jars.
