Ingredients

  • GLAZE

  • 100g pistachios, chopped
  • 60ml fresh flat-leaf parsley, chopped
  • 20ml olive oil
  • 60ml hoisin sauce
  • 60ml honey
  • juice of 1 lemon
  • 2 garlic cloves, finely chopped
  • 1 red chilli, seeded and sliced
  • 4 pork fillets, trimmed
  • 10ml cracked pepper
  • 20ml Maldon salt
  • 20ml butter
  • 40ml olive oil
  • 2 red apples, thinly sliced
  • 2 red onions, sliced
  • 8 slices streaky bacon
  • 32 small leeks, blanched

Instructions

Mix the glaze ingredients together and refrigerate for 10 minutes.

Place the fillets on a working surface and season well. Rub the glaze all over the fillets and pan-fry until cooked, about 20 minutes. Remove and keep warm.

Melt the butter and olive oil in a frying pan and gently sauté the apple and onion. Remove and keep warm until needed.

Wrap a slice of bacon around four leeks. Sauté it in the same frying pan until the bacon is crispy but not burnt, about 5 minutes. Remove and keep warm.

Slice the fillet and place on a serving dish. Serve warm with the leeks and apple and onion slices.
