Perfect with morning toast, cheese platters or dolloped on scones
Prickly pear and grape preserve
- 250ml (1 cup) red grape juice
- 7 prickly pears, peeled and roughly chopped
- 250ml (1 cup) seedless grapes
- 190ml (¾ cup) sugar
- 30ml (2 tbsp) lemon juice
Bring the grape juice to the boil and add the prickly pears and grapes. Allow to simmer for 10 minutes. Mash lightly to form a chunky purée.
Add the sugar and lemon juice, and return to the heat. Simmer until thick and sticky, about 20 minutes.
Pour into a sterilised jar, seal and allow to cool before refrigerating to set.
