Roasted banana and coconut milkshake with Amarula

We grew up with milkshakes – on holidays, on the beach and in our grandmother’s kitchens. This grown-up version with a touch of Amarula puts milkshake in the spotlight for a glam dessert.

This recipe is strictly for adults, but we have a children-friendly Cookie Monster milkshake the whole family will enjoy.

Roasted banana and coconut milkshake with Amarula

Serves: Makes 1L (4 glasses)
Cooking Time: 45 mins

  • 4 ripe bananas
  • 4 – 6 scoops vanilla ice cream
  • 250ml (1 cup) coconut milk, chilled
  • 100ml Amarula liqueur

Preheat the oven to 180°C.

Place the unpeeled bananas on a baking sheet lined with wax paper and roast until the bananas are brown and the juices run out, about 30 minutes.

Peel the roasted bananas and place in the blender with 4 – 6 scoops of vanilla ice cream. Slowly blitz the mixture while adding the coconut milk, blending until smooth.

Add the Amarula and blend for another few minutes before serving.
