• The sweet, juicy flesh of the scallops pairs beautifully with fresh Asian flavours – a perfect summer starter. 

    Scallops with lime, chilli and fresh mint

    Serves: 4



    Combine the juice of 2 limes, 2 seeded red chillies, a large handful of fresh mint and a pinch of salt. Toss 400g scallops in the marinade and chill in the fridge for 8 minutes. Either serve it raw, or lightly sear the scallops in vegetable oil for 30 seconds. Serve with fresh watercress or baby greens.
