• Small cottage loaves

    Ingredients

    • quantity of basic bread dough
    • water, to dampen
    • flour, for dusting
    • 1 large egg, beaten, to glaze
    • sesame or poppy seeds, to garnish

    Instructions

    Preheat the oven to 200°C. Grease a baking tray.

    Make your dough according to the recipe on p45 and use one-third of the quantity to make the cottage loaves.

    Divide the dough into 75g portions. Divide each portion into two-thirds and one-third.

    Roll each piece into a ball. Dampen the top of the larger ball with water and place the smaller one on top.

    Push a floured forefinger or the handle of a small wooden spoon through the centre to secure the two pieces together. Set aside to prove.

    Glaze the loaves with beaten egg. Leave them plain or sprinkle with sesame or poppy seeds.

    Bake in the centre of the oven until they sound hollow when tapped, about 20 minutes. Remove from the baking sheet and cool on a wire tray.
