Sticky aubergine starter with pomegranate glaze is the perfect beginning to a dinner party. Sweet pomegranate is delicious with the earthier, more neutral aubergine. Ideal for entertaining!
Sticky aubergine starter with pomegranate glaze
- 2 large aubergines, cut lengthways into quarters
- 30ml (2 tbsp) salt
- 30ml (2 tbsp) olive/avocado oil
- 30ml (2 tbsp) brown sugar
- 100ml thick soy sauce
- 100ml pomegranate extract
- seeds of 1 pomegranate
Sprinkle the aubergines with salt and set aside for 20 minutes. Rinse and pat dry. Preheat the oven to 220°C and grease a baking tray with the oil.
Whisk the sugar, soy sauce and pomegranate extract together. Toss the aubergines in the soy mixture, place on the baking tray and roast until golden brown, about 20 minutes.
Serve sprinkled with the pomegranate seeds.
