Strawberry and lime syrup ice cream

The tartness of the lime marries well with the sweetness of the strawberries.

Strawberry and lime syrup ice cream

Serves: 6 – 8
Cooking Time: 50 mins plus extra for setting

Ingredients

  • ICE CREAM
  • 7 egg yolks
  • 300g castor sugar
  • 250ml fresh cream
  • 250g strawberries, finely chopped
  • LIME SYRUP
  • juice and rind of 3 limes, rind finely sliced
  • 200g castor sugar

For the ice cream, beat the egg yolks with 200g sugar until pale.

Heat the cream in a pot and add the egg mixture. Cook until the mixture is thick and coats the back of a wooden spoon. Allow to cool completely.

Add the strawberries to the remaining sugar and allow to stand for about 30 minutes.

Mix the custard with the strawberries and spoon into a plastic container. Refrigerate until set. Remove, stir and refrigerate again. Repeat three times.

For the syrup, put the lime juice and rind into a pot with the sugar, and cook until a syrup has formed. You might have to add about 20ml water so that it’s not too sticky. Allow to cool and serve over the strawberry ice cream.
