Three-bean salad

Serves: 6 - 8
Total Time: 15 mins


  • 1 x 400g tin chickpeas, drained and rinsed
  • 1 x 400g tin butterbeans, drained and rinsed
  • 1 x 400g tin red kidney beans, drained and rinsed
  • celery stalks, chopped
  • 1 red onion, peeled and diced
  • 2 tbsp sundried tomatoes, chopped
  • 3 tbsp olive oil
  • 1 tbsp red-wine vinegar
  • small handful fresh coriander chopped + extra, to garnish



Combine all the ingredients in a medium bowl. Mix until well combined.


Serve immediately, garnished with the extra coriander.
