Soak a 340g packet rice noodles in a bowl of boiling water until pliable, 15 – 20 minutes. Drain and set aside until needed. Heat 3 tbsp canola oil in a large skillet placed over high heat. Add a 375g store-bought pack of stir-fry vegetable mix and sauté until the vegetables are soft, about 5 minutes. Add ½ tsp dried chilli flakes and the cooked rice noodles, and toss well to combine. Remove from heat and drizzle with 60ml (¼ cup) hoisin sauce. Toss once more to distribute the sauce, then serve.
