• Warm honey & blue cheese dip with fresh figs

    This warm honey & blue cheese dip with fresh figs is the perfect starter for Christmas Eve dinner.

    PREP TIME 15 minutes | COOK TIME 15 minutes | SERVES 4 

     

    INGREDIENTS

    • 250 g cream cheese
    • 150 g mild blue cheese, coarsely chopped
    • 1 tbsp honey
    • Rye bread loaf, thinly sliced
    • 2 tbsp olive oil
    • 4 fresh figs, quartered 
    • ½ cup walnuts, roasted

     

    METHOD

    PREHEAT oven to 220℃.

    BLEND cream cheese, blue cheese and 2 tsp of the honey in a food processor until smooth, season with black pepper. Spoon into an ovenproof serving bowl and place on a baking tray. Bake for 12 minutes until golden and bubbling.

    PREHEAT oven grill to high. Brush bread with oil and grill for 1 minute each side until golden and crisp.

    ARRANGE warm dip, bread, figs and walnuts on a platter, drizzle remaining honey over figs and walnuts.

     

    FOOD TEAM TIP: Roasting nuts is always a great way to bring out their flavour. Roast at 180℃ for 5 minutes until golden brown, or roast in a pan over medium-high heat until evenly golden and fragrant.
