Watermelon and vodka ices recipe

Arguably the most refreshing of fruits for lazy summer afternoons, watermelon pairs incredibly well with vodka. Add some fresh mint leaves to this watermelon and vodka ices recipe if you fancy.

Watermelon and vodka ices

Serves: 8
Cooking Time: 15 mins + extra for setting

  • ½ watermelon, chopped
  • 500ml (2 cups) watermelon juice
  • 60ml (¼ cup) vodka or more to taste

Blend the watermelon until smooth, then pour through a sieve into a measuring jug to make 500ml (2 cups). Stir in the vodka.

Pour into 30ml shot glasses and place in the freezer. Just as the ices are beginning to set, after about 1½ hours, place the lolly sticks in the glasses.

Allow to freeze for a few hours until completely set.

Remove from the freezer and give the sticks a good turn – the ices should slip out easily. Serve in an ice bucket to make the ices last a little longer.
