• Well the humble hamburger just got an elegant makeover. This rocket, avocado and bacon burger is a delicious combination of fresh, earthy, zesty and hearty.

    Rocket, avocado and bacon burger

    Ingredients

    • 250g shoulder bacon
    • 400g beef mince
    • salt and freshly ground black pepper
    • 1 finely chopped small onion
    • 1 lightly beaten egg
    • 50ml finely chopped fresh flatleaf parsley
    • 1 finely chopped garlic clove
    • 50g cubed blue cheese
    • 20ml (4 tsp) butter
    • 10ml (2 tsp) olive oil
    • 4 sliced sesame bread rolls
    • rocket, to serve
    • sliced avocado, to serve
    • oven-baked chips, to serve

    Preheat the oven to 200°C. Bake shoulder bacon until crispy, about 10 minutes. Place on a paper towel to drain. Put beef mince in a bowl and season with salt and freshly ground black pepper, to taste. Add finely chopped small onion, lightly beaten egg, finely chopped fresh flatleaf parsley, finely chopped garlic clove and cubed blue cheese.

    Mix well, form the mixture into 4 patties and chill for 20 minutes. Heat butter and olive oil in a frying pan and gently fry the patties for about 5 minutes on each side. Place on paper towels to drain. Place 4 sliced sesame bread rolls on a work surface and top with rocket. Add sliced avocado, the bacon and a patty. Top with extra rocket and serve hot with oven-baked chips.
