    Sweet pasta dish (aletria)

    Ingredients

    • 100g angel-hair pasta
    • 500ml (2 cups) milk
    • 110g castor sugar
    • strip lemon rind
    • 1 cinnamon stick
    • 45g butter
    • 4 egg yolks
    • zest of 1 lemon
    • ground cinnamon, to serve

    Instructions

    Cook the pasta in boiling water according to packet instructions until al dente. Drain and add the milk, sugar, lemon rind and cinnamon stick. Bring to a boil, then reduce heat and simmer, about 5 minutes. Remove the lemon rind and cinnamon stick.

    Add the butter to the pasta. In a bowl, beat the egg yolks and add to the pasta. Simmer over a very low heat to cook the egg, 5 minutes. Add the lemon zest and remove from heat. Pour into a serving dish and serve sprinkled with ground cinnamon. Serve warm or once it has cooled.
