    Rich spiced hot chocolate

    Whisk a cup of milk and 3 tbsp cocoa powder in a bowl until smooth and combined. Combine 840 ml milk, 3 cups double cream, 1 cinnamon stick, pinch of nutmeg and cardamom, 1 tbsp orange zest and ½ cup sugar to a pot over medium heat. Bring the mixture to a gentle boil and simmer for 1–2 minutes. Add in the milk and cocoa powder mixture and whisk until heated through. Add in 200 g milk chocolate and whisk until dissolved. Cook on a low heat for 3–5 minutes until the mixture is thick enough to coat the back of a spoon. Pour into serving cups and sprinkle with cocoa powder, chocolate shavings and cinnamon.
