    Serves: 4-6

    Ingredients

    • Sweet corn and cheese
    • 4 gem squash
    • 1 can creamed sweetcorn
    • Grated cheddar cheese
    • Chopped parsley to garnish
    • Mince and cheese
    • 4 gem squashes , halved, pips removed & cooked
    • 1 tbsp oil
    • 1 onion , finely chopped
    • 1 tsp minced garlic
    • 1 carrots, finely grated
    • 500 g lean mince
    • 2 tsp paprika
    • 1 tbsp tomato paste
    • ½ cup beef stock
    • 1-2 tsp sugar
    • 1 tbsp mixed herbs
    • 1 tsp chilli flakes ( optional)
    • salt & freshly ground black pepper to taste
    • Grated cheese
    • Fresh parsley , chopped
    • Spinach, bacon and feta
    • 1-2 cups chopped Spinach
    • ½ onion, finely chopped
    • ½ yellow bell pepper
    • 1 tsp minced garlic
    • 1 cups diced bacon
    • 1 tsp mixed herbs
    • 1 tsp paprika
    • 1 tsp chilli flakes ( optional)
    • 1-2 tsp flour
    • ½ -1 cup cream
    • Feta cheese crumbled
