• Almond ciabatta French toast

    Ingredients

    • 3 large eggs
    • 2,5ml (½ tsp) salt
    • 45ml (3 tbsp) sugar
    • 5ml (1 tsp) vanilla extract
    • 2,5ml (½ tsp) almond essence
    • 250ml (1 cup) milk
    • 125ml (½ cup) fresh cream
    • 8 thick slices of ciabatta loaf
    • 15ml (1 tbsp) butter
    • 100g (1 cup) flaked almonds
    • 45ml (3 tbsp) honey, plus extra for serving

    In a bowl, whisk the eggs, salt, sugar, vanilla and almond essence well together. Slowly whisk in the milk and cream. Pour into a shallow dish and soak each slice of bread for about 1 minute on each side.

    Heat a frying pan over low heat and melt the butter. Once it bubbles, place a single, dense layer of almonds in the pan in the shape of the bread and drizzle with the honey. Press a slice of bread onto the almonds and fry until golden brown. Turn over and cook until golden on both sides. Repeat for the rest of the slices.

    Serve the French toast hot, drizzled with the extra honey.
