• Nothing smells better than freshly baked goods in your home, especially on a Sunday morning! These scones are the epitome of baking perfection – tender, buttery, and studded with juicy blueberries. Whether you’re savouring them for breakfast, brunch, or an afternoon treat, these scones are sure to become a cherished favourite!

    FOOD TEAM TIP: For a better rise to your scones, use cold butter when rubbing in. You can chill your scones before baking (optional).

    Blueberry Scones

    Serves: Makes 16
    Total Time: 1 hour 15 minutes

    Ingredients

    • 2 ½ cups self-raising flour 
    • 1 tbsp caster sugar 
    • ¼ tsp salt 
    • 30 g butter 
    • 1 ¼ cups buttermilk, approximately 
    • 1 ½ tsp lemon zest 
    • 60 g fresh blueberries

    Preheat the oven to 220°C. Grease a baking tray.

    Sift flour, sugar and salt together in a bowl. Rub in butter with your fingertips until the mixture resembles a crumb consistency. Make a well in the centre of the flour mixture and add buttermilk, zest and blueberries. Using a knife, cut buttermilk through a flour mixture to form a soft, sticky dough (add a little more buttermilk only if needed). Gently knead the dough on a floured surface until smooth.

    Using your hands, press the dough out evenly until 2cm thick. Cut 5cm rounds from dough, place, side-by-side, on the tray. Gently knead scraps of dough together; repeat pressing and cutting, place on the tray.

    Brush tops with a little extra milk and bake for 20 minutes or until browned and scones sound hollow when tapped firmly on the top with your fingers.

    Serve with jam and cream.
