Delicious boeber tarts to make for Boeberaand

The 15th night of Ramadan is almost upon us, and with that comes the much anticipated Boeberaand (or Boeber night).

Boeberaand is a tradition that is mainly rooted in the Cape Malay community. On this day, the halfway mark of Ramadan is celebrated by making boeber.

These delicious boeber tarts put a twist on the traditional drink.

Boeber tarts

Serves: 8 tarts
Total Time: 40 min


  • 100 g butter
  • 400 g phyllo pastry
  • 5 cardamom pods, crushed
  • 2 cinnamon sticks
  • 1 L full-cream milk
  • 1/3 cup sago, soaked for 20 minutes
  • 1 tin condensed milk
  • 1 tsp rose water



Preheat oven to 180°C. Grease a muffin tray.


Melt 50 g butter. Lay out the phyllo on your counter. Cut into 4 squares. Make 8 piles of 4 phyllo squares stacked on top of each other, brushing butter between each layer. Press each pile into a muffin hole.


Bake for 15 minutes, until golden brown. Set aside and allow to cool completely.


Melt remaining butter in a pot. Add cardamom and cinnamon. Fry for 2 minutes.


Add milk and bring to a simmer. Add sago and cook, stirring continuously, for 20 minutes. Add condensed milk and rose water.


Cover with cling film, making sure it touches the surface of the mixture (to prevent a skin forming). Allow to cool to room temperature.


Spoon the boeber custard into the cooked pastry cups.
