• Chocolate panforte di siena

    Ingredients

    • 100g butter
    • 330g honey
    • 350g good-quality dark
    • chocolate, chopped
    • 175g cake flour
    • 5g mixed spice
    • 50g cocoa powder
    • 250g dried apricots, chopped
    • 200g dried figs, chopped
    • 300g flaked almonds
    • 100g pistachio nuts
    • 100g icing sugar, for dusting

    Preheat the oven to 160°C. Line 2 x 15cm x 3cm ring cake tins with baking paper.

    Boil the butter and honey, and add the chocolate. Mix in the flour, spice and cocoa until smooth. Mix in the apricots, figs, almonds and nuts.

    Halve the mixture and press into the prepared tins. Place another sheet of baking paper over the top to protect it from the heat while baking. Bake for 15 minutes.

    Allow to cool, dust with icing sugar and cut into thin slices.
