Deep-fried wild rocket

TO DRINK: Brunia Sauvignon Blanc 2009, a cool-climate wine with lovely minerality, fruit and acidity, which will give the rocket a marvellous edge.

Deep-fried wild rocket

Serves: 4
Cooking Time: 20 mins


  • 1 large egg, lightly beaten
  • 300ml iced soda water
  • 120g (1 cup) cake flour
  • oil, for deep-frying
  • 300g wild rocket
  • Maldon salt, to serve



For the batter, combine the egg, soda water and flour and mix to form a smooth-running batter.


Heat the oil until very hot. Dip small batches of rocket into the batter, then carefully deep-fry for a minute and drain on paper towel. Repeat until all the rocket is used.


Serve the rocket sprinkled with the salt.
