Give yourself a weekday break and forget about last-minute, time-consuming dinner dishes. Garlicky wild mushrooms on rye toast are all you need! Delicious, quick and easy (and vegan, as a bonus!).
Garlicky wild mushrooms on rye toast
Heat a glug of olive oil in a frying pan over low heat. Add 1 peeled and minced garlic clove and a small handful fresh thyme and rosemary leaves and sauté, 3 minutes. Turn the heat to high, add 320g exotic mushrooms (larger mushrooms sliced) and fry until the mushrooms are cooked through and golden, about 10 minutes. Season the mushrooms with salt to taste. Spread 2 large slices of toasted rye bread with wholegrain mustard and top with the fried mushrooms.
Sprinkle with fresh rosemary leaves to serve.
