    Homemade granola with stewed fruit and vanilla yoghurt

    Serves: 2 (granola recipe makes about 2 litres)
    Cooking Time: 1 hour 50 mins

    Ingredients

    • GRANOLA

    • 500g oats
    • 120g sesame seeds
    • 5ml (1 tsp) ground cinnamon
    • 150g golden syrup
    • 80ml (1/3 cup) runny honey
    • 100g light brown sugar
    • 250g almonds
    • 2,5ml (½ tsp) salt
    • 30ml (2 tbsp) sunflower oil
    • 300g raisins
    • STEWED FRUIT

    • 250ml (1 cup) mixed dried fruit
    • 125ml (½ cup) water
    • 45ml (3 tbsp) brown sugar
    • 2,5ml (½ tsp) ground cinnamon
    • juice of ½ lemon
    • 400ml double-thick vanilla yoghurt

    For the granola, combine all the ingredients, except the raisins. Use two spatulas for mixing to ensure even distribution. Spread the mixture out on 2 baking trays and bake until crispy, about 40 minutes. Stir 2 – 3 times during baking so that it doesn’t burn

    Remove from the oven and leave to cool, then mix in the raisins. Store in an airtight container until needed (see Cook’s Tips below).

    For the stewed fruit, combine the fruit, water, sugar and cinnamon in a small saucepan. Stew over a low heat until soft and thick, about 1 hour. Just before serving, add the lemon juice. (See Cook’s Tips below.)

    Layer the granola, stewed fruit and yoghurt in 2 bowls and serve.

    Notes

    Granola will keep for up to two weeks in an airtight container. The stewed fruit will keep up to a week in the fridge. Simply warm before serving.
