• Loadshedding Burrito Bowl

    If you enjoy Mexican food and the sheer convenience, albeit delicious flavours, that burrito bowls provide, this loadshedding recipe is for you! It is whipped up in a jiffy and packed with nutritious flavours.

    TOTAL TIME 10 minutes | SERVES 1

    INGREDIENTS

    1 Cup Couscous, cooked
    ¼ Cup Tomato salsa
    4 Slices of lime
    1 cup black bean and corn mixture
    1 Tbsp smashed avo
    1 Tbsp vegan Mayo
    Salt and pepper as needed

    METHOD

    PLACE all the ingredients in a salad bowl and serve immediately.
