Whether you are simply craving chocolate, or looking for an elegant, but easy dessert for your dinner party, you cannot go wrong with this chocolate mousse!
Lovely chocolate mousse
Melt 100g dark chocolate in a double boiler and set aside to cool. Beat 3 large egg yolks and 30ml (2 tbsp) castor sugar until thick and creamy. Mix the chocolate mixture into the egg yolk mixture until well blended. In a bowl whip 125ml (½ cup) of fresh cream until stiff and set aside. In another bowl whip 3 large egg whites until soft peaks form. Fold the egg whites into the chocolate mixture until well mixed. Spoon into serving glasses and refrigerate for 30 minutes. Serve topped with extra whipped cream and fresh berries.
