• Martini-thyme cocktail

    • 40ml fresh thyme
    • 15ml sugar syrup (boil equal amounts of water and sugar, then cool)
    • 80ml gin
    • juice of ½ lime
    • 1 lime slice, twisted, to serve



    Muddle all the ingredients together except the sliced lime. Use a pestle and mortar if you don’t have a bar muddler. Strain into a martini glass. Garnish with the lime and serve.
