Melon with lemongrass syrup
- 100g sugar
- 250ml water
- juice of ½ lemon
- 1 lemongrass stalk, sliced
- 1 spanspek melon, peeled, seeded and sliced
- lemon sorbet, to serve
- fresh mint, to garnish
Heat the sugar and water in a small pot over medium heat. Once the sugar has dissolved add the lemongrass and simmer for 10 minutes.
Pour the sugar mixture over the sliced melon and chill.
Serve with lemon sorbet and top with fresh mint.
