Oat bars with honey and sesame seeds

A great alternative to your afternoonbiscuit with tea.

Oat bars with honey and sesame seeds

Serves: makes 24

Ingredients

  • 250ml honey
  • 80g smooth peanut butter
  • 100g whole almonds
  • 80g desiccated coconut
  • 150g currants
  • 100g sunflower seeds, toasted
  • 50g sesame seeds, toasted
  • 200g oats

Instructions

Preheat the oven to 180°C. Lightly grease a 23cm x 32cm Swiss roll tin.

In a small pot mix together the honey and peanut butter over medium heat until all is melted, about 5 minutes.

Remove from heat and add the remaining ingredients. Press the mixture into the tin and bake for about 45 minutes.

Switch off the oven and leave to set for about 20 minutes.

Remove and cool completely in the tin before cutting into bars.

Notes

Oat bars will keep for about 10 days in an airtight container.
