Oatmeal cookies with mascarpone and caramel filling
- 450g butter
- 450g castor sugar
- 450g brown sugar
- 5 eggs
- 25ml vanilla essence
- 900g self-raising flour
- 4ml salt
- 240g oats
Mascarpone and caramel filling
- 50g butter
- 2,5ml (½ tsp) vanilla paste
- 250g icing sugar
- 30ml (2 tbsp) mascarpone
- 30ml (2 tbsp) Nestlé Caramel Treat
Preheat the oven to 180°C. Grease a baking tray.
Cream the butter and sugars in a large bowl until light and fluffy. Add the eggs and vanilla, and combine.
Sift the flour and salt, and add to the butter mixture together with the oats.
Roll into 20g balls and place on the prepared baking tray. Bake in the preheated oven, 12 – 15 minutes. Set aside to cool.
For the filling, mix together the butter, vanilla paste and icing sugar. Add the mascarpone and Caramel Treat. The mixture should be stiff enough to hold the cookies together. Use the mascarpone filling to stick two cookies together to make oatmeal biscuit sandwiches.
