Pasture-reared roasted chickens
- 2 pasture-reared chickens
- 2 small onions, chopped
- 2 garlic cloves, chopped
- juice of 1 lemon
- 45ml (3 tbsp) olive oil
- salt and freshly ground black pepper, to taste
Preheat the oven to 180ºC.
Place the chickens in a roasting tray. Mix together the onions, garlic and lemon juice and rub all over the chickens. Pour over the oil and season. Roast uncovered for 1 hour 30 minutes.
Serve with trimmings of your choice.
