    PAIR WITH… Iced-coffee cream

    Mince-pie French toast

    Serves: 4 - 5
    Cooking Time: 20 mins

    Ingredients

    • 250g streaky smoked bacon, sliced
    • 30g castor sugar
    • 2 eggs
    • 250ml (1 cup) milk
    • 50ml crème fraîche
    • 60ml (¼ cup) classic mincemeat ( see recipe here)
    • 8 slices leftover crusty bread
    • 100g butter
    • 50ml maple syrup
    • star anise, to garnish
    • cinnamon sticks, to garnish

    Instructions

    1

Grill the bacon under a hot grill until crispy, about 10 minutes.

    2

Make the batter by mixing together the sugar and eggs. Add the milk and crème fraîche and mix to combine. Stir the mincemeat into the batter.

    3

Soak the bread slices in the batter, about 30 seconds.

    4

Heat the butter in a non-stick frying pan over low heat and fry the soaked bread slices until golden brown on both sides.

    5

Serve the French toast with a good drizzle of maple syrup and a couple of rashers of crispy bacon. Garnish with star anise and cinnamon sticks.

    Notes

Try getting hold of some brioche to make an even more decadent version.
