Plum and ginger sticky ribs recipe

Plum and ginger sticky ribs might sound a little unusual, but these are just as delicious as your standard BBQ ribs. The unique flavours give a special kick to the meat, which becomes succulent, salty and sweet.

Plum and ginger sticky ribs

Serves: 2
Cooking Time: 20 mins + marinating time

Ingredients

  • 15ml (1 tbsp) fresh ginger, finely grated
  • 10ml (2 tsp) garlic, finely chopped
  • 1,25ml (¼ tsp) green chilli, finely chopped
  • 80ml (? cup) plum sauce
  • 45ml (3 tbsp) tomato sauce
  • 20ml (4 tsp) soy sauce
  • 20ml (4 tsp) honey
  • 500 – 600g ribs
  • salt, to taste
  • Parmesan and herb mashed potatoes, to serve
  • fresh rocket salad, to serve

Instructions

Combine all of the ingredients and pour over the ribs. Cover and leave to marinate in the fridge for at least 30 minutes.

Preheat the oven to 230°C and turn on the grill setting. Line a baking tray with foil and lightly spray with non-stick cooking spray.

Place the ribs on the foil and brush any remaining sauce from the bowl onto the ribs. Grill the ribs until tender and sticky, about 15 – 20 minutes. Season lightly with salt and serve with the Parmesan and herb mashed potatoes and the rocket salad.

Notes

To drink: With the spicy flavour of ginger try an equally aromatic wine, like an off-dry fragrant Gewürztraminer or a delicate, floral Riesling.
