This light, mousse-y French cream is absolutely perfect with juicy and tart fruits. Seasonal berries with almond sabayon is the ideal dessert for when you’re craving something light but sweetly satisfying.

Seasonal berries with almond sabayon

Serves: 4
Cooking Time: 15 mins

Ingredients

  • 4 large egg yolks
  • 20ml (4 tsp) ground almonds
  • 80g castor sugar
  • 200ml fresh cream, stiffly whipped
  • 500g berries, fresh or frozen
  • 60ml (4 tbsp) sugar
  • good-quality vanilla ice cream, to serve

Instructions

For the sabayon, cream the egg yolks, almonds and castor sugar in a bowl until pale. Fold in the whipped cream.

Heat the oven grill to hot. Divide the berries between 4 ovenproof bowls and sprinkle with the sugar. Spoon the sabayon over and grill in the oven for 1 – 2 minutes.

Serve with a scoop of vanilla ice cream.

Notes

To drink: Beyerskloof Pinotage Rosé Brut NV, because nothing beats a good sparkling wine with berries.
