Snoek with cinnamon stewed apricots
- 400g (2 cups) sugar
- 1 litre water
- 4 cinnamon sticks
- 400g dried apricots
- salt and freshly ground black pepper, to taste
- 1kg fresh or lightly smoked snoek
- 45ml (3 tbsp) butter, melted
- 500g ready-cut skinny French fries
Place the sugar in a pot together with the water and cinnamon sticks. Cook over low heat until the sugar has dissolved. Add the apricots and stew very gently until they are plump and soft, about 2 hours.
Meanwhile, prepare the coals to medium heat. Season the snoek well and braai to your liking, basting regularly with the butter.
When the snoek goes onto the braai, pop the fries into a pot of very hot oil and fry until golden, about 10 – 15 minutes. Serve the snoek warm with the apricots and fries.
