Breakfast will be a breeze with this oh-so-easy chia overnight parfait. Yum!

Cappy® Breakfast Blend chia overnight parfait

Serves: 4
Total Time: 10 mins + overnight, to chill


  • 100g fresh/frozen blueberries + extra, to garnish
  • juice of 1 lemon
  • 200g rolled oats
  • 30g coconut flakes
  • 2 tbsp chia seeds
  • 35g pumpkin seeds + extra, to garnish
  • 250ml (1 cup) Cappy® Breakfast Blend Juice
  • 250g double-thick/thick plain Greek yoghurt
  • 60g store-bought/home-made granola
  • honey, to serve



Mix the fresh/frozen blueberries, lemon juice, rolled oats, coconut flakes, chia seeds, pumpkin seeds and Cappy® Breakfast Blend Juice together in a large mixing bowl. Toss until well combined. Cover with cling film and refrigerate overnight.


To serve, divide the parfait mixture among four bowls. Top each portion with a dollop of yoghurt, a sprinkling of store-bought/home-made granola and a drizzle of honey. Garnish with the fresh/frozen blueberries and pumpkin seeds. Serve immediately.
