Tipiak chicken and cashew nuts with vegetables and couscous

    Cooking Time: 45 minutes


    • oil, to fry
    • 250g Tipiak Organic Wholewheat Couscous
    • 500g chicken breasts, thinly sliced
    • 1 red pepper, seeded and chopped
    • 3 green onions, rinsed and cut into 4
    • 45ml (3 tbsp) olive oil
    • 300ml water
    • 100g cashew nuts
    • 125g chickpeas
    • salt and freshly ground black pepper, to taste



    Heat some oil in a wok or frying pan over high heat, and brown the chicken, pepper and the onions, 5 minutes. Add the water and bring to a boil.


    Remove from heat, add the Organic Wholewheat Couscous and cover, 6 minutes. Add the cashew nuts and the chickpeas and season to taste. Return to the heat to cook for a final 3 minutes. Serve hot.
