Vanilla and honey-roasted figs on waffles with mascarpone
- 8 figs
- 60ml (¼ cup) honey
- seeds from ¼ vanilla pod
- 4 ready-made waffles
- 80ml ( cup) mascarpone
- toasted almonds, to serve
- fresh mint, to garnish
Preheat the oven to 220°C.
Place the figs in an ovenproof dish. Stir the honey and vanilla seeds together and drizzle generously over the figs. Roast until tender and blistered, about 10 – 15 minutes. As the figs cook, they will release some moisture. Continue to spoon the syrup over the figs as they roast.
Prepare the waffles as per the instructions on the packet.
Dollop some mascarpone on the waffles, top with the figs and drizzle over some of the honey cooking liquid. Scatter with the almonds and garnish with the mint. Serve immediately.
