• Clove and coffee biscuit sandwiches

    Serves: Makes about 10 sandwiches

    Ingredients

    • 190g butter
    • 150g castor sugar
    • 300g (2½ cups) cake flour
    • 5ml (1 tsp) ground cloves
    • 2 large eggs
    • Icing

    • 15ml (1 tbsp) instant coffee powder
    • 15ml (1 tbsp) water
    • 130g (1 cup) icing sugar
    • coffee beans, to garnish

    Preheat the oven to 180°C and line a baking tray with baking paper.

    Cream the butter and sugar together. Add the flour, cloves and eggs, and mix to form a dough. Knead the dough for 2 minutes, cover with plastic wrap and chill in the fridge for 20 minutes.

    Roll the dough out onto a lightly floured work surface and cut out biscuits with a cookie cutter. Place the biscuits on the baking tray and bake until golden, about 15 minutes. Remove from the oven and leave to cool.

    For the icing, dissolve the coffee powder in the water. Add the icing sugar and mix.

    Spread some icing on a biscuit, then top with another biscuit to form a sandwich. Drizzle with the icing and garnish with coffee beans.
