These pork koftas are a delicious option to mix up your midweek meals! They burst with flavour, and the Asian spice mix complements the pork superbly. Served with a refreshing yoghurt dip, with a choice of fried rice or toasted flatbread.
Pork koftas with apricot & ginger
Ingredients
- 1 tbsp olive oil
- 1 chopped onion
- 1 finely chopped garlic clove
- 1 tsp salt
- 1/2 tsp white pepper
- 1/2 tsp star anise
- 500g pork mince
- 5 cm piece of finely grated fresh ginger
- 20 finely chopped dried Turkish Apricots
- 3 tbsp chopped fresh parsley
- 100 ml full cream natural yoghurt, mixed with 2 tbsp chopped fresh parsley and 1 tbsp lemon juice, season to taste
Instructions
Heat the oven to 200ºC
Heat the oil over moderate heat in a pan, and fry the onion and garlic, until the onion is translucent
Tip the cooked onion and garlic into a mixing bowl, and mix with the remaining ingredients
Divide the mixture into four, and mould each around a skewer
Place skewers in a greased oven dish and cook for 20 minutes
Serve with yoghurt dressing and flavoured fried rice or toasted flatbread
