Chop beef fillet into good-sized chunks and place in a bowl. Add finely chopped shallots, finely chopped flat-leaf parsley, finely chopped garlic cloves, lightly beaten egg and finely chopped sundried tomatoes, and season to taste. Mix all the ingredients together and form 4 patties. Place in the fridge for 10 minutes. Lightly fry the patties in sunflower oil and drain on kitchen towel, or cook them on the braai. To assemble, slice open 4 ciabatta rolls and spread some avocado on each half. Top with crispy bacon, a patty and lots of fresh sprouts.
