Cranberry, walnut and brie Christmas pastry wreath

Indulge in the festive spirit with this mouthwatering cranberry, walnut, and brie Christmas pastry wreath! A delightful blend of rich, creamy brie cheese, tart cranberries, and crunchy toasted walnuts, all encased in a flaky, golden pastry. This show-stopping appetiser is not only visually stunning but also a flavour-packed crowd-pleaser that will elevate your festive feast.

Ingredients

  • Cranberry sauce
  • 2 cups cranberries
  • Zest of half an orange
  • ¾ cup water
  • ¾ cup sugar
  • ½ tsp nutmeg
  • Wreath
  • 1 ½ sheets puff pastry
  • 200 grams brie cheese, cut into thin slices
  • 30 grams lightly toasted pecan nuts , roughly chopped
  • 1 rosemary sprig , leaves removed and chopped
  • 1 egg, beaten

Instructions

Cranberry sauce

COMBINE all the ingredients together in a pot and bring to the boil over a medium high heat. Cook for 15 minutes, until the mixture looks a bit like a compote. Remove from the heat and allow to cool completely.

Wreath

PREHEAT oven to 200ºC.

CUT your pastry into long triangles, you will need 8-12-depending on how big your baking tray is.

PLACE a small round ramekin or bowl onto a baking paper lined tray. Place the triangle doughs neatly around the bowl, with the short side touching the bowl and slightly overlapping each other , to create a star shape.

PRESS the short ends down and together slightly so they stick. Working close to the bowl, add a layer of cranberry sauce onto the short end of the dough and top with brie slices, toasted pecans. Remove the bowl from the middle.

FOLD the tip end of each of the triangles toward the center, covering the filling and tuck the end bit underneath. Do this with all the triangle tips until all the pieces are tucking towards the center.

BRUSH with egg wash and sprinkle generously with salt and rosemary.

BAKE for 20-25 minutes until golden brown and crispy.

Notes

Originally we wanted to use frozen cranberries but they were unavailable. If you have run into the same problem, you can also use dried cranberries or use store bought cranberry sauce.
